With back to school starting for some this week, easy breakfasts that can be prepped in advance are essential for getting out of the door on time! I love to have ready to eat breakfasts in the fridge for the whole family because I have a kid who wakes up hungry and a hubby who takes his breakfast to go! Some days I get tired of overnight oats and eggs so switching it up to keep things interesting is key! Chia pudding is one of those breakfast that I tend to forget about and then when I remember, I go through a chia pudding phase where I can’t get enough! Currently I’m in that phase, and because it’s so easy, I created easy chia pudding (three ways) so that you can set yourself up for success in the mornings!
July has been a whirlwind of a month between going on vacation, lots of work happenings, and getting the worst summer cold last week. Sleep schedules have been off, diets have been off, and honestly I am ready to get back to some routine around here as we get ready for back to school in a couple of weeks. It’s Monday which means busy mornings are in full swing around here! One of my favorite ways to survive the morning is to have a freezer and fridge stocked with easy breakfasts! I have a kiddo who wakes up asking what is for breakfast before I have even fully opened my eyes and so having a breakfast I don’t have to think about is a lifesaver! Lately I am so obsessed with blueberry everything and just can’t seem to get enough! I created these double blueberry waffles on a whim one weekend and have been making them ever since!
For the first two weeks of January I was having a hard time getting out of holiday mode and back on track with regular everyday life.
