Halloween is this week and we got in the spirit by carving pumpkins over the weekend! Parks wanted no part of scooping out the insides (ha) but he was super into helping daddy decide on the facial expressions that each pumpkin should have! I have officially been bitten by the fall baking bug! Even though the weather here in Texas isn’t cooperating, I am carrying on with all of the fall recipes! Pears are one of those fall fruits that I feel like people forget about and honestly they are one of my favorites at this time of year! I obviously love them as a healthy snack all by themselves, but they are also fantastic to use in savory dishes and baked goods alike! My best friend lives in New York and there is this cookie place called Schmakary’s that has this oatmeal scotchie that is just to die for! Every time we visit, I have to go get one, and you will have to do the same when you go! It’s perfectly chewy, and the best combination of flavors and because I love butterscotch, there have been few cookies to ever top it for me! I don’t know why it has taken me so long to try and recreate a healthier version at home, but the good news is, I finally did it! My healthier oatmeal scotchies are perfect for after school treats, or just to have around when you sweet tooth comes knocking!
Somewhere along the way, my kiddo decided that he HAD to have a donut every time we were at the grocery store. I mean, I am all about a donut every now and then but y'all...I go to the grocery about 2 or 3 times a week!
