The weather has just been picture perfect lately and I know that means that the real Texas heat is about to be here in a matter of days, but for now it has been so lovely. We have been spending every second that we can outside in the sprinkler, at the park, blowing bubbles in the backyard...whatever! My boys and I love to be outside whenever possible and so I have been thinking of ways that I can get dinner on the table without having to make Parks come inside while I'm doing it! And since I love to grill, it's the perfect solution to dinner and in preventing a toddler meltdown. My grilled pineapple and flank steak tacos are simple, loaded with tons of flavor, and your whole family is going to love them!

Well it happened, the weekend came and went in a flash just like it always does. Our weekend consisted of getting a new washing machine because last week the transmission in our old one went out, which come to find out repairing it would have been more than the new one we bought. Oh the joys of adulting right? On a positive note, I made some serious ground on the cookbook I am currently writing, Baby's First Eats! I still have a list a mile long every day until my deadline, but I'm are making some serious progress people. Since I am cooking all day everyday right now, easy dinners (that are healthy too) are a must! Thanksgiving is over...did you make it through? Are you still in stretchy pants? Because it's totally okay if you are. If you had a week anything like mine, you are probably trying to get back on a the healthy diet bandwagon (if not for only a few weeks before Christmas) and are looking for recipes that aren't lacking in the flavor department. Fried chicken is no different and because we seriously hardly ever indulge on the real thing, my easy and healthy breaded chicken is the golden ticket in satisfying my tastebuds.
Oh man, the weather here over the weekend was absolute perfection. Windows were open, there was a crispness in the air, and I actually could feel fall. We had Parks' 1st birthday party and celebrated with friends and family and it couldn't have been a more perfect day. His birthday will always signify the start of fall since it's on October 1st, and to me it doesn't seem like fall until October. One of my favorite ways to get into any season is to start cooking with my favorite seasonal flavors.
