My love language is definitely in the form of pasta. Just give me all of the pasta, red sauce based pastas in particular, and I’ll love you forever. True story, just ask my hubby. My dream is go visit Italy and cook alongside an Italian grandma, and let her teach me her ways. I would be the happiest camper and my life would be complete. Wouldn’t that be amazing? One day…but anyway, speaking of pasta and Italian dishes, lasagna is one of those dishes that for some reason I only make for special occasions. I am not sure why, because it really isn’t that hard and it freezes beautifully too which makes it perfect for meal prepping. I came up with the recipe a few years ago when I got a hankering for lasagna and the result was out of this world. It's layered with flavor and I even lightened it up just slightly so you can feel a little better about lasagna night at your house any weekday! My spinach and beef lasagna is sure to delight the bellies of all your family and friends and it will soon become one of your favorite pasta recipes to make guaranteed.

Fall is here and it’s time to break out those slow cookers y’all! I honestly always forget how much I love my slow cooker until I use it and realize just how easy it makes weeknight dinners. I know Instant Pots are all the rage, but I just can’t stop using my slow cooker. There is something about the smell of cozy food cooking all day long and filling the house with delicious smells that just makes me so happy. One of the recipes I make the most in my slow cookers is a classic pot roast. This is a meal that my mom made me growing up and it happens to be one of my husband’s favorite fall meals! My Easy Slow Cooker Pork Roast is full of flavor, easy to make, and you can make multiple meals out of it for the whole week.

It’s officially October, which means it’s time to make ALL the pumpkin things! I love this time of year so much, and while I’m over here waiting on our first cool front to swing through, I’m pretending it feels like fall with all the cozy recipes. This week we celebrated P’s 4th birthday, decorated the porch with pumpkins and mums, and now I’m officially ready to get cooking in the kitchen with all of my favorite fall recipes. I love Vietnamese food. Lately I can’t stop making dishes with an Asian flare and meatballs happen to be the perfect vessel to infuse with those delicious flavors! One of our favorite Vietnamese dishes is a Bahn Mi Sandwich. It can be made with several different proteins, but I happen to love a pork Bahn Mi the best, especially when topped with quick pickled veggies, spicy jalapeño, and cilantro! It’s a sandwich loaded with flavor and my family can’t get enough of it! I have even made Bahn Mi Tacos in my slow cooker that are so perfect for any weeknight dinner! My new favorite twist on the traditional sandwich, is my Bahn Mi Meatball Sandwich that is perfect for meal prepping and dinners that the whole family will love!

We are meatball obsessed in my house and I am a firm believer that meatballs don’t have to be just for Italian cuisine! I love taking some of my favorite flavors, like chicken shawarma, and turning them into a meatball! I love that meatballs can be prepped in advance, are kid-friendly, and make for an easy dinner any night of the week! Greek flavors in general are some of my favorite and I created a bowl that combines all of my favorites into one dish that makes for the best weeknight dinner! My chicken shawarma meatball bowls are full of flavor and easy to whip up making this recipe ideal for a healthy family friendly dinner!

I am not sure when Taco Tuesday became a thing, but I am totally on board. For one I love tacos (duh), but secondly I love that every week I can use this day as an excuse to make some sort of taco and I don’t have to think about what’s for dinner! The only thing I have to decide is do I want steak tacos, fish tacos, taco salads, or chicken tacos! Not a bad problem to have right? I have been meaning to share my chicken taco recipe and and am finally getting around to it! This recipe is not only full of flavor, but it can be ready in 30 minutes any night of the week!
