This light, flavorful, and easy Vietnamese noodle salad is one of those dishes that pairs perfectly with grilled seafood or chicken, but also can be great for a make ahead lunch idea. Rice noodles get loaded with vegetables and tossed with a delicious rice wine vinaigrette that only gets better the longer it sits in the fridge. I love making it ahead of time and eating it for lunch all week long or having it on hand for and easy dinner side dish. This Vietnamese vegetable and noodle salad recipe is easy to make, can use up whatever veggies you have in your fridge, and is a winning dish with the whole family.
Tuna salad is way underestimated in my opinion. I make a batch at least once a week and it’s hands down one of my favorite healthy lunches! Everyone has their own favorite way to make tuna salad, but I learned this recipe from my mama years ago (she learned from her dad), and I might be biased, but our recipe truly is the best! I season mine with old bay, a classic seafood seasoning, and put lots of crunchy goodness in there for texture and flavor. Tuna salad is so great for meal prepping, which is why I tend to make this recipe almost weekly. Do yourself a favor and make the best tuna salad you’ve ever eaten by following my simple but flavorful recipe!
After being out of town for a week, I spent the day yesterday meal prepping to help prepare for a week of getting back on track with work, school, and our regular routine! One of the first items up that I prepped was an easy pasta salad. Pasta salads are on of those dishes that I love making ahead of time because they make easy lunches and/or a simple addition to dinner! Another perk is that they just get better in the fridge after sitting for a day or two. I love that I can add a tons of veggies into the mix to bulk up the pasta along with whatever protein I want to add in whether that be beans, chicken, or cured meats! I am currently obsessed with my new favorite pasta salad which just so happens to use one of my go-to seasonings, everything bagel seasoning. My Everything Bagel Pasta Salad is not only easy to make, but your whole family is going to love eating it all week long!
Two years ago my hubby and I went to Maine and fell in love with haddock sandwiches. They were everything you could want in a fish sandwich and more. These haddock sandwiches were made with simple ingredients letting the fish shine through. They were not greasy at all and yet had a perfectly crisp crust on the outside. The bun was golden, dressed simply with tangy tartar sauce and crisp lettuce and pickles. Is your mouth watering yet? (Because mine is, and it’s only 7 am here.) Needless to say we had a haddock fish sandwich almost every single day on our vacation, even if it meant splitting one because we just couldn’t get enough! Lucky for you, I created an at home version of our favorite New England Style Haddock Sandwich that rivals the original sandwich that I fell in love with!
With the holidays in full swing it can sometimes feel impossible to keep up with a healthy lifestyle due to the constant influx of treats that co-workers, family, and the internet keeps throwing your way! This is the time of year I find most people throw in the towel and say I’ll just start fresh in January because they find it too overwhelming to stay the path! That’s why I like to prep easy and healthy lunches at the beginning of the week so that I can be sure I have something nutritious and satisfying to help me resist the holiday temptations throughout the day! My easy single serving veggie ramen bowls are going to be your new favorite healthy make ahead lunch for any day of the week!
