I wouldn't consider myself a non-computer person, but I also would not consider myself a savvy computer gal. I get by and know how to do the things I know how to do...you know what I mean? Anyway, I have been putting off creating food recipe videos for a while because it is out of my comfort zone, but yesterday I decided to bite the bullet and create my very first video with a super simple recipe that happens to be one of my favorite side dishes! My crispy roasted potatoes are perfect for any night of the week and can be served at breakfast, lunch, or dinner!
Happy New Year guys! I hope your holiday was fantastic and your new year has started out just the way you had hoped it would! We are finally all feeling better around here and I have health on the brain as one of my top priorities for this year! I am definitely not talking about losing weight here, but more about over all health and taking care of myself better so I can be a better mom, a better wife, and better at my job! One of my favorite ways to incorporate more nutrients into my diet is to sub cauliflower for things like rice and mashed potatoes when I have those carb cravings hitting me hard! I have the best recipes for easy cauliflower rice two ways that you are going to love!
Holy moly, where has this year gone guys? Christmas is in FIVE days and I am not sure if I am ready or not! My shopping is done, but I just don't know if I am ready for the season to be over and for all of the Christmas decorations to come down. Everything looks so pretty with extra twinkle from the lights and my house always feels so bare when the tree goes down. I am trying to soak up these last days before Christmas and do all of the Christmas things like making tons of cookies, blaring Christmas tunes, and planning out my menu! To me, potatoes are a must on Christmas and my easy potatoes au gratin are always a hit at the table!
Happy Thanksgiving week guys! I cannot believe that it is already that time and I haven't even been to the grocery store yet! I get a little bit of anxiety about getting to the store and beating the Thanksgiving rush of shoppers, afraid that they might buy all of my ingredients before I have a chance to. Does that happen to anyone else or am I just OCD? We were out of the town last weekend for my sister-in-law's wedding so I didn't get to the store during my usual time frame! Nevertheless, I will be shopping for ingredients today and one thing is for sure, I will be getting everything I need for my simple and creamy mashed potatoes.
I have been a little pre-occupied with Parks' birthday and family being in town, therefore I have been a little MIA...oops. I feel like the past eighteen days of October have disappeared right before my very eyes. How is it possible that it's almost Halloween? On top of that, two of my burners on the stove went out last week due to a possible wine spillage (possibly from my mom...we won't tell her though) and I have had to be super creative with our meals due to my limited cooktop. Easy side dishes that can be done quickly to make room for the next pot are a requirement these days! My 10-minute shaved Asian brussel sprouts are going to be your new favorite healthy side dish for any day of the week!
Unless you have been living under a rock, you probably have seen some kind of footage from the floods in Louisiana. My husband's family, our dear friends, and thousands more have lost so much in this tragedy that occurred over the weekend. I have been almost feeling guilty about posting my regular food, because honestly it seems kind of silly considering what is going on in South Louisiana right now. But...then I got to thinking that if I was there, I would be trying to feed people because it's what I do, and a good plate of hot food can always make people feel better. So here is a colorful dish that is one of the most delicious things I have ever made, I kid you not. My Easy Skillet Mexican Corn on the Cob is going to bring a smile to your face and to your belly no matter what kind of day or week you have been having.
