We had the best weekend guys. The weather was gorgeous, we hung out outside literally all day on Friday and Saturday and it was just one of those perfect weekends that you don't ever want to end. I am always excited for a new week/fresh start, but I have to say that I am a little sad to see this particular weekend come to a close! However, with a new week and fresh start, we also get back to our favorite weekly recipes that are healthy, full of nutrients, and keep us going all day long! We usually rotate through a few favorite weekday breakfasts, but one recipe that I continue to make over and over is my blueberry vanilla oatmeal!
I was sitting at my hair salon in Baton Rouge over the weekend and my hair stylist started telling me about this amazing new Indian Cajun fusion restaurant in New Orleans where he had a delicious turmeric cocktail. He said it was an after dinner drink and that it tasted amazing! Ever since then I haven't been able to get that cocktail off of my mind! I love a turmeric latte so I knew I would love a cocktail version of it just as much! My anti-inflammatory spiced rum golden milk is going to your new favorite post dinner cocktail (or anytime cocktail for that matter)!
As we were driving back from Louisiana over the weekend, we stopped at a gas station and my hubby came back to the car with a pack of Almond Joys. They are 100% his favorite candy bar and so after I rolled my eyes at him (because my sweet tooth can't be stopped when candy is present) we all split that Almond Joy and I have to admit, it tasted amazing. But as I was eating it I was thinking about how simple it would be to make that same candy bar right in my own kitchen with minimal ingredients that aren't terrible for us to enjoy and then I wouldn't have to feel any guilt about satisfying my chocolate craving! My recipe for 5 ingredient healthier almond joys are so delicious that you will never miss the real thing!
Hellooooo again friends! I'm so sorry for laying low last week, but I needed a little recharge and had to take a break from work to get re-inspired! We also went out of town last weekend to Louisiana for my niece's 3rd birthday and a dear friend's baby shower and we had so much fun! We tried a couple of new restaurants, and had my favorite (around this time of year), boiled crawfish and absolutely did not count calories! You could say I am in need of a detox and nothing but healthy meals after a weekend of indulging with friends and family (which for the record I am a firm believer of out of town indulgences)! My turmeric and mustard apple cider superfood spinach salad is just the kind of salad I will making probably more than once this week while I get back on track.

Monday whipped my booty y'all. I am not going to lie, it was a little rough. I didn't sit down until well after 7:00pm (but for real) and then when I attempted to take a bath, my toddler hijacked it. Like straight up, "mommy Parks take bath too." And I mean of course I couldn't tell him no, so I took a cold bath and he swam in a sea of bubbles and was the happiest kid on the block. Which, in turn made me the happiest mama on the block too, but man I had been looking forward to that bath. When I put him to bed, I yawned really big and he said "Mommy sleepy"...yes buddy mama was super sleepy last night. I totally get it now why my mom would fall asleep as soon as she would sit down my whole life! This mom stuff is no joke! So while we are on the topic of days where you literally don't have energy to think about dinner, let me help you out!
