Whoa, what a week last week! If you followed along with me on Instagram, you will know that we talked about everything back to school and had a week full of giveaways and more! It was such a great week, but this week we are back to talking about easy dinners, because at this time of year, we need those easy meals more than ever! Am I right? You may have seen my Top 10 Easy Weeknight Meal post by now, but in addition to meals that are ready in under 30 minutes, at this time of year slow cooker meals come in very handy too! My Slow Cooker Sticky Asian Ribs are so easy to make up any day of the week and your whole family is going to love them!
Hold the pumpkin, summer isn't over yet! While I am all on board for the weather changing slightly (we have a bit to go here in Texas still), I am still eating up all the summer fruits and I'm just not quite ready to say goodbye. Labor Day is a few days away and with the long weekend ahead, I am planning out our menus for each day and you bet that includes cocktails, because what holiday weekend is complete without a good cocktail? My watermelon mint slush is a drink I have been making all summer long and will continue to make until watermelons have seen their better days for the year.
Almost everyone I know is in full back to school mode and almost everyone I know is feeling a little more tired than usual this week (us included). Between new schedules, earlier rise times, and having to pack lunch boxes I know that getting dinner on the table can sometimes seem like more of a chore than ever! Somewhere along the way, my kiddo decided that he HAD to have a donut every time we were at the grocery store. I mean, I am all about a donut every now and then but y'all...I go to the grocery about 2 or 3 times a week! That is too many donuts for anyone in one week, especially because I try to limit the amount of sugar we get! So because of his new obsession with this very unhealthy food item, I decided to make us a healthier version at home! I love creating my own version of foods that are indulgent right in my own kitchen because I can control the ingredients! My healthy carrot cake donuts are perfect to make in advance for all week long and you can feel good about your family eating them!
We love fish tacos, like really love them. Matter of fact they are one of my hubby's top requested meals for dinner! They seem lighter than other tacos making me feel not so bad about eating them and they are ready in under thirty minutes which is always a plus! I also happen to be very into turning my favorite meals into bowls lately, which is what I did with this recipe! I took everything I love about fish tacos and put it in a big bowl, sans tortilla! I'll just never be the girl who can give up pasta. There I said it, I've tried before and I've failed, and I decided a life without pasta is just no life for me. You feel me right? That's why we are friends after all... I mean I'm not saying we should be eating it every day of the week, but when the craving hits, you most definitely should indulge!
