I was in denial about today being Monday all last night. I procrastinated going to bed, refusing to let our week of vacation come to an end. This morning I was so comfortable in my bed, there was a chill outside, and the last thing I wanted to do was get out of the bed and face Monday head on including lots of emails, errands to be run, and loads of laundry that are haunting me. But...life must go on and I made myself get up. Mornings like these call for easy breakfasts that I can throw together and not have to put a lot of energy into. Not to mention, I need a little does of healthy in my life this week after indulging in eating my way through South Florida last week (more to come about that tomorrow). This ricotta, honey, and cracked black pepper persimmon toast is the perfect start to my Monday and I think I might just eat it all week long.
I've already told you about my love for persimmons when I shared with you the persimmon spiced punch a couple of weeks ago, which would be the perfect Halloween drink by the way. Eating it on a piece of toast slathered with ricotta and then adding a little honey and cracked pepper just makes me fall in love with the fruit even more.
Persimmons are full of vitamins, FYI, so I highly recommend giving them a try! Did I just make a little rhyme? Look at me...
Anyway, I love ricotta toast for breakfast with fruit, but if that doesn't do it for you early in the morning, try it out for an afternoon snack. It's the perfect pick me up and will fill you up too!
I guarantee there will be no excuses to not eat breakfast at home because this literally takes two minutes to prepare! And it's delicious...which always helps too.
Ingredients:
- 1 Persimmon, Sliced Thin
- 3 Tbsp. Ricotta Cheese (Whole or Skim)
- 1 Tbsp. Honey
- Fresh Cracked Pepper
- Crusty, Whole Wheat Bread (I used Seeduction from Whole Foods)
Directions:
- Slice your toast, and get the pieces toasty in the toaster or oven.
- Spread 1 1/2 Tbsp. of Ricotta Cheese on each piece of toast.
- Layer your persimmon slices on top of the cheese.
- Drizzle 1/2 Tbsp. of Honey on each slice of bread.
- Crack a little black pepper to taste to finish off the toast.
I see lots of coffee in my future today as I ease back into reality and I can't wait to share with you the details from our trip last week and all of the amazing moments that we had!
