Guys, are we feeling healthier this week and more motivated to stay on track? I sure am, but if you aren't that's okay too, but hopefully you are at least feeling a little more inspired in the kitchen! We are on day three of my healthy foodspiration series, and today I am featuring Gaby Dalkin from What's Gaby Cooking and three of her favorite go-to healthy meals!
I got to know Gaby last year a little better when I interviewed her for the blog. One of my favorite things about Gaby's recipes is the amount of color that is always on the plate! She cooks with the perfect balance of health and decadence and uses the freshest ingredients, usually from her local farmer's market.
Gaby is originally from Arizona but now calls California home. Her style of cooking has a Southwestern flair and her ingredient of choice is almost always avocados! She has a cookbook dedicated the super food that is titled, Absolutely Avocados. In the book you can find tons of new ways to use avocados in more than just your guacamole, not that there is anything wrong with guacamole!
If you don't already follow along with Gaby, you will after today because she is genuinely a sweet person with a passion for making delicious and healthy food. I am consistently inspired by this lady's work and I think you will be too!
