We only have a few more weeks of summer and I have mixed feelings about it all. I mean let’s be honest, in Texas we have about three more months of summer weather, but with every new season there is a shift. I am hanging on to low key dinner nights, grilling in the backyard, sounds of water splashing in the kiddie pool behind me, and not having too much of an agenda. So that’s what we are going do for these last weeks of summer. Let’s savor it all with a fun twist on a classic recipe that I grew up eating. Low country boils are popular in the south and are typically served up on a warm summer day spread out on newspapers and enjoyed with cold beers. But because not everyone has a ginormous pot hanging around and an outside burner, I am taking those same nostalgic flavors and making them easy enough for anyone to whip up any night of the week. This recipe for low country boil skewers is going to be your new favorite grilling recipe and you are going to love just how easy they are to make.
Shrimp, sausage, potatoes, and corn get seasoned with Old Bay, skewered, and grilled up for the perfect summertime dish. I brush them with butter, squeeze some fresh lemon over top, and then serve them up with homemade cocktail sauce. They are just so full of flavor and really are so simple to make. You could use any sort of sausage that you like here, and you could even make them spicy by using an andouille sausage and Cajun seasoning instead of the Old Bay. I can’t think of a more perfect summertime dinner to be enjoyed by family and friends. Can you?
I like to serve up a nice big green salad on the side and dinner is done with just a few simple ingredients and loads of flavor. It’s just the way a summertime dinner should be if you ask me, and I love the extra flavor that the grill adds here versus when everything is boiled. Ingredients:
1 lb. Shrimp, Peeled and Deveined
1 Lb. Smoked Sausage, sliced in pieces
2 Cups Baby Potatoes
4 Ears of Corn on the Cob
1 Tbsp. Avocado or Olive Oil
1 Tbsp. Old Bay Seasoning
1 Tsp. Salt
1/2 Tsp. Black Pepper
2 Tbsp. Melted Butter
Lemon Wedges
1/4 Cup Ketchup
1 Tsp. Plain Horseradish
Directions:
Boil potatoes for 10 minutes until they are just fork tender, but not soft yet. Drain and set to the side.
Cut corn into 4 disks per cob.
Toss shrimp, sausage, potatoes, and corn disks into a large bowl.
Season with avocado oil, old bay, salt, and pepper and toss to coat evenly.
Skewer the seasoned ingredients alternating back and forth until all ingredients have been used.
Preheat grill to medium high heat.
Add skewers onto the grill and cook for 5-6 minutes per side until shrimp are opaque and sausage and veggies have nice grill marks.
Brush the skewers with melted butter the last 2 minutes of cook time.
Remove from the grill and squeeze fresh lemon over top of the skewers.
Make cocktail sauce by whisking together ketchup and horseradish and then serve on the side.
Serve immediately.
