Is there anything better than the smell of fresh cookies wafting through the house on any given day? It immediately gives me a warm and fuzzy feeling and a sense of comfort. There is just something about a homemade cookie that just gives me all of the cozy vibes. While I don’t consider myself an avid baker, I do have a few tricks up my sleeve when it comes to basic baking like cookies, banana breads, muffins, etc. You won’t find me doing anything elaborate in the baking department, but what I do bake is usually pretty darn tasty. For me, a cookie that is irresistible is one that has a little sweet and salty aspect to it. Whether that means it is sprinkled with a little sea salt on top, or has some savory element mixed into the cookie, I just find it to be the perfect cookie combo. That’s why I created these 6-ingredient peanut butter pretzel chocolate chip cookies that combine everything I adore about cookies into one recipe.
And yes you read that right, these cookies only contain 6-ingredients!
That means anyone can make them and they are a no-fail cookie that taste delicious too. Who doesn’t love a peanut butter cookie? This recipe takes that classic peanut butter cookie that we all love and when you add little salty pretzel bits with melty chocolate chips, the combination is heavenly! Have you ever had those peanut butter filled pretzels? If so, then you know that peanut butter and pretzels make for one dynamite pairing! I can hardly buy them to be honest with you because I tend to want to eat the whole bag. But that delicious snack gave the idea for these cookies and the results were so GOOD.
The ingredients are super simple and they don’t contain any flour, which gives them a super dense and delicious texture. They have a little crunch from the pretzels mixed with melty chocolate chips into each bite and it’s just a match made in heaven.
Some tips on ensuring these cookies come out great are to roll them into smooth balls before you press them with the classic peanut butter cookie fork cross hatch and the baking happens. If when you press them with the fork, they fall apart slightly, simply re-roll and do over. I find that if just the edges break a bit you can just sort of squish it back together. See, this is why I am not a self-proclaimed baker. Do you like my instructions here? “Squish it back together” is a technical term ya know…The point is, these cookies don’t have to be perfect to be delicious!

Ingredients:
1 Cup Creamy Peanut Butter
1 Cup Brown Sugar
1 Tsp. Vanilla
1 Egg
1/3 Cup Chopped Pretzels
1/3 Cup Mini Chocolate Chips
Directions:
Preheat oven to 350 degrees.
Mix peanut butter, brown sugar, vanilla, and egg with a mixer until smooth.
Fold in pretzels and chocolate chips.
Spoon out a tablespoon of dough and roll into a ball.
Press with a fork to slightly flatten the cookie and make cross hatch marks on each cookie. If they fall apart re-roll and press again.
Place 1-2 inches apart on a parchment lined baking sheet and bake for 8-10 minutes until lightly browned.
Let cool for at least 5 minutes on baking sheet before moving them. If you move them before the 5 minutes, they will likely fall apart on you.
Store in an airtight container for up to a week.
