Pumpkin tends to get all of the love at this time of year, but apples deserve their own time in the spotlight if you ask me. There are so many varieties of apples out there, but one of my favorite to bake with happen to be granny smith apples. I love the slight tartness that they bring to a recipe and they are perfect for muffins as well. There is nothing that smells much better than fresh muffins baking in the oven, and these definitely do not disappoint. This recipe for apple cinnamon streusel muffins is sure to become one of your favorite fall muffin recipes.
Making a batch of muffins at the beginning of the week is the best way to start off each day with something delicious with minimal effort. I love to warm up one of these muffins and top it with butter or if I need something a little more substantial, I go for some nut butter and honey! Either way you serve them up, I can guarantee you are going to love the taste of this apple cinnamon streusel muffin!
These apple cinnamon streusel muffins are made with minimal ingredients, the recipe is straight forward, and I would say pretty fool proof for any level of baker that you might be. Flour, baking powder, salt, sugar, cinnamon, apples, milk, eggs, and oil are pretty straight forward ingredients when it comes to baking and this recipe really comes together quickly with the end result of a delicious bakery style muffin.

Kids love them! (They are great to throw into a lunchbox or have for an after school snack in addition to being great for breakfast.)
They can be frozen, just simply wrap in plastic wrap and store in an airtight container or freezer bag and then get out when ready to enjoy.
I have a delicious breakfast or snack option throughout the week.
Last but not least, they are a super easy muffin recipe and taste like they came from the bakery!
Ingredient Notes:
Swap all purpose flour for whole wheat flour if you prefer.
Any variety of apple will work here, so use what you have on hand if needed.
Don’t bother peeling the apple, when it’s grated you’ll never know its there + the skin has extra nutrients.
Feel free to swap brown sugar for granulated or coconut sugar as long as you don’t adjust the amount.
This is your warning that you are going to want to make a batch of these delicious apple streusel muffins this week and probably every week after that!
Ingredients:
1 3/4 Cups All Purpose Flour
2 1/2 Tsp. Baking Powder
1/2 Tsp. Salt
1/2 Cup Granulated Sugar
1 Tbsp. Cinnamon
1 Egg
1 Tsp. Vanilla Extract
3/4 Cup Whole Milk
1/3 Cup Avocado or Olive Oil
1 Cup Grated Granny Smith Apple
For the Topping-
2 1/2 Tbsp. All Purpose Flour
1/4 Cup Brown Sugar
1/2 Tsp. Cinnamon
2 Tbsp. Cold Butter, cut into small cubes
Directions:
Preheat oven to 400 degrees.
Mix flour, baking powder, salt, sugar, and cinnamon in a large bowl.
In another bowl combine egg, vanilla, milk, oil, and grated apple and whisk to combine.
Slowly add wet ingredients into dry ingredients until just combined.
Make topping by combining flour, brown sugar, cinnamon, and butter in a small bowl using hands to break up butter until it resembles coarse wet sand.
Spoon the batter into lined muffin tins until 3/4 full.
Top with a the streusel topping covering each muffin.
Bake for 18-20 minutes until cooked though.
Let cool and serve immediately or store for up to 3 days.
Note: The muffins will keep longer if stored in the refrigerator and can be frozen as well.
