Chili is one of my go-to meals when I want a cozy and hearty weeknight dinner. I partnered with my friends at Tony Chachere’s to create this delicious variation of a classic. This cajun chicken and andouille chili has everything you love about a traditional chili, but with a Cajun twist! This chili is the perfect dinner to serve up to your whole family any night of the week and the best part is you can have leftovers to enjoy on a another night that are even better.
This Cajun chili recipes begins with the holy trinity of bell pepper, onion, and celery and is loaded with protein from the chicken, andouille, and beans that all get seasoned perfectly with Tony Chachere’s Original Chili Seasoning Mix! It’s hearty, a little spicy, and a meal that you can feel good about serving your family.
Variations of this recipe:
Use ground turkey instead of ground chicken.
For less spice, switch andouille sausage to another smoked sausage of your choice.
Use Tony Chachere’s Mild Chili Seasoning Mix instead of the Original.
After browning the vegetables and the meat, add all of the ingredients to a slow cooker to finish cooking.
Add different toppings based on you preference.
How to store the chili:
Refrigerate any leftovers for up to 5 days or freeze for up to 3 months in a freezer safe container.
How to cook the chili:
Sauté the vegetables and brown the meat.
Add tomatoes, drained beans, and Tony Chachere’s Chili Seasoning Mix.
Add water and bring to a simmer.
Let cook for at least 30 minutes for flavors to combine and serve.

Ingredients:
- Lb. Chopped Andouille Sausage
- Lb. Ground Chicken
1 Cup Diced Onion
1/2 Cup Diced Bell Pepper
1/2 Cup Diced Celery
1 Tony Chachere’s Original Chili Mix
1 Can Kidney Beans
1 Can Pinto Beans
1 Can Black Beans
1, 15 oz. Can Finely Diced Tomatoes
1, 15 oz. Can Tomatoes with Green Chiles
1 Tbsp. Tomato Paste
1 Tbsp. Tony Chachere’s Original Creole Seasoning
4 Cups Water
1 Tbsp. Olive Oil
For Topping-
Green Onions
Sour Cream
Jalapeños
Directions:
Add olive oil to a large pot and then add in ground chicken. -Sauté until the chicken begins to brown and then add in andouille sausage and continue browning.
Add in diced onion, bell pepper, and celery.
Add 1 Tbsp. Tony Chachere’s Creole Seasoning and continue to cook until the veggies begin to soften.
Add in tomato paste, both cans of tomatoes, and the drained and rinsed beans and stir.
Add in Tony Chachere’s Original Chili Mix along with water and stir until combined.
Simmer the chili for at least 30 minutes before serving.
Top with desired toppings and enjoy!
