With Spring on the brain, I am suddenly in the mood for all sorts of salads and color on my plate! It has been unusually cold here this week in Texas, but that does not change the fact that I have been day dreaming about sunny Spring days that are in the very near future! While wintery meals tend to be more laborious, I love how with the switch of seasons, meals become more simple and effortless. Simple salads are one of my favorite things to make at this time of year when the days gets longer and the weather gets nicer! Even better, are salads that can be prepped in advanced and eaten throughout the week for easy lunches or dinners! My Chickpea BLT Salad with Cilantro Dill Dressing is a salad that is packing serious flavor and will quickly become one of your new favorites!
This salad is full of texture, flavor, and is hearty enough to stick with you! With healthy fats from avocado and full fat yogurt dressing, fresh herbs, and salty bacon all on top of a bed of crunchy romaine, you are going to love satisfying your BLT craving in a new way that is a bit healthier and lighter!
You can serve it by itself for a light lunch or grill up some chicken to pair alongside for dinner too! This salad can be prepped in advanced and makes for a super easy lunch box idea for adults and kids alike! Kids love this salad and they usually love chickpeas too! Ingredients:
1, 15 oz Can of Drained and Rinsed Chickpeas
4 Pieces of Cooked Bacon
4 Cups Julienned Romaine Lettuce
1/2 Cup Diced Tomatoes
1 Diced Avocado
1 Tsp. Chopped Dill
1 Sliced Green Onion
1/2 Tsp. Salt
1/4 Tsp. Black Pepper
For the Cilantro Dill Yogurt Dressing-
1/2 Cup Plain Full Fat Greek Yogurt
2 Tbsp. Mayonnaise
2 Tbsp. Lemon Juice
1 Tbsp. Milk (more if desired for a thinner consistency)
1 Tbsp. Chopped Green Onion
1 Tbsp. Fresh Dill
1 Tbsp. Chopped Cilantro
1 Tsp. Salt
1/2 Tsp. Pepper
Directions:
In a large bowl combine chickpeas, tomatoes, green onions, dill, and avocado and then season with salt and pepper.
Combine dressing ingredients and blend until smooth. Alternatively chop green onion, dill, and cilantro very fine for a chunkier dressing.
Layer the chickpea mixture on top of romaine lettuce and then sprinkle chopped cooked bacon over top.
Drizzle desired amount of dressing and toss to combine. Serve immediately.
Note: If making in advance, simple wait to add dressing and lettuce until ready to serve. This ensures the lettuce doesn’t get soggy!
