Breakfast casseroles are one of those dishes that come in handy for meal prep and when you have guests that will be staying in your house. Whenever I need to feed a crowd for breakfast, this casserole is my go-to recipe. What I love most about it, is that I can prep the ingredients the day before and have breakfast in the oven before my guests even wake up, leaving me time to sip coffee and visit while it bakes! ( #winning ) While there are an endless variety of breakfast casseroles out there, this is one that has been in my family for forever and though I might be biased, I truly think it’s the best! My egg, sausage, and hash brown casserole is a crowd pleaser every time and couldn’t be any easier to make!
This egg, sausage, and hash brown casserole is perfect just as is, but sometimes I even like to add some veggies to the mix and have used onions, bell pepper, and even spinach, all work great here. I just simply sauté up the veggies first and then add them into the layers after the sausage gets added. You can make it different every time as long as you stick to the basic recipe and truly it’s just so delicious.
I like to brown the sausage the day before and go ahead and layer it on top of the hash browns and cheese and keep in the refrigerator and then all I have to do the morning of is whisk my eggs and milk and pour over top and then pop into the oven! It couldn’t be any simpler to make and it is essentially 5 major ingredients that combined make the ultimate breakfast for all of your friends and family.
I promise after you make it once, everyone will want the recipe and it will be requested at every family function from here on out. Serve it alongside some fruit and even some toasted english muffins slathered with a bit of butter or avocado and you have quite the spread to fill hungry bellies in the best way. In addition to being a great recipe for when you have company at your house, it’s also really amazing for any meal prep to keep on hand throughout the week for easy breakfasts.
This recipe is 100% kid and adult friendly and is a classic recipe that you should make ASAP!
Ingredients:
1 Lb. Hot Breakfast Sausage (can use mild)
1 Bag Frozen Shredded Hash browns (thawed)
4 Cups Shredded Cheddar Cheese
12 Eggs
2 Cups Milk
1 Tbsp. Salt
1 Tsp. Black Pepper
Directions:
Preheat oven to 350 degrees.
Cook sausage and drain on paper towels to remove excess grease.
Place thawed hash browns in the bottom of a greased 9 x 13 dish and season with 1/2 of the salt and pepper.
Layer cooked sausage and cheese on top of the hash browns.
Whisk eggs with the remaining salt and pepper and milk until combined well and then pour over top of the cheese, sausage, and hash browns.
Bake for 50 minutes to 1 hour until eggs are cooked through.
Let sit 5-10 minutes and then serve.
