A stir fry is always a go-to easy dinner for me any night of the week. While I make several different varieties, this ginger and garlic pork stir fry is one of those recipes that I have been making over and over recently. It’s one of those meals that truly the whole family loves (including kids) and its made with simple ingredients that are cost effective and delicious. If you are looking for a new dinner recipe to add into the mix, you have to try out this ginger and garlic pork stir fry that is simply irresistible.
I love to buy thinly sliced pork chops for this stir fry to make slicing easier, but you could also slice up a pork tenderloin or thicker cut chops if needed. I have also made this same recipe with chicken and beef and it turns out great if you are not a pork person.
To prepare, the meat gets browned up in a wok and then I add a ton of ginger and garlic to the mix before adding a simple sauce that has the perfect balance of flavors. The meat simmers in the sauce just until thickened and then I add green onions and chiles to finish it off. I like to serve it over jasmine rice, but you can also add a side of vegetables as well.
This meal can be prepared from start to finish in under thirty minutes and is a crowd pleaser every time. It’s better than takeout and better for you as well.
Variations of this recipe:
Use chicken instead of pork.
Use steak instead of pork.
Add vegetables to the stir fry such as broccoli, snap peas, carrots, mushrooms, cabbage, and more.
Instead of serving over rice, serve it over noodles.
Add spice to the stir fry by adding chiles when ginger and garlic are added.
Ingredients:
1.5 Lb. Thinly Cut Pork Chops, Cut into thin strips
1 Tsp. Salt
3 Finely Minced Garlic Cloves
1 Tbsp. FInely Chopped or Grated Ginger
1/4 Cup Soy Sauce
1 Tbsp. Brown Sugar
1 Tsp. Fish Sauce
1 Tsp. Constarch
2 Tbsp. Water
1 Tbsp. Avocado Oil
1/4 Cup Green Onions
Serrano or Other Chile for Topping
Jasmine Rice for Serving
Directions:
Heat a wok over medium high heat and add avocado oil.
Add pork slices in batches, seasoning with a little salt in a single layer so that the meat can get seared on each side and not steam due to overcrowding. Cook on both sides about 2-3 minutes and then remove cooked pork, and add next batch until all of the pork has been seared.
While pork is cooking make the sauce by combining soy sauce, brown sugar, fish sauce, cornstarch and water and whisk to combine.
Add all of the pork to the wok and then add in ginger and garlic and cook for another 2-3 minutes.
Pour the sauce over the pork and cook for another 5 minutes until the sauce thickens.
Top with green onions and chiles and serve with jasmine rice or vegetables on the side.
