Easy weeknight meals are a must when back to school rolls around and this recipe for shortcut slow cooker salsa verde chicken is a must make. The definition of an easy weeknight meal can mean different things to different people, but I think everyone will agree that this recipe actually is easy and is also really delicious too. This salsa verde chicken can be prepped in advance, or cooked in your slow cooker so that it is ready to eat when you are on even the busiest of weeknights.
I like to use a mixture of chicken thighs and breasts here, but you can use just thighs or just breasts if you prefer. This is a slow cooker meal that you literally dump the ingredients into the crockpot, stir it, and let it go low and slow. Once the chicken is cooked through, simply shred it and add it to tacos, burrito bowls, or make quesadillas with the meat! There are so many options for different meal ideas and the leftovers get even better the next day!
My whole family enjoys this meal and I know yours will too. I can’t wait for you to give this one a try for yourself.
