This is truly my favorite time of year. It’s a time when the holidays bring friends and families together from all over, food is shared, and it’s just so special. Truly nothing brings me more joy than creating a meal made with love and serving it to my guests. I love creating a dish that simmers all day, like my Italian Meatball Soup to be eaten with Mulino Bianco® Sfilati Tomato Breadsticks and to be enjoyed by all! The house smells of warmth and love and everyone leaves with happy bellies. My Italian Meatball Soup is truly one of those heart warming meals that is perfect when you have a house full of loved ones.
I think all soups need some sort of dipper to go alongside it, and Mulino Bianco breadsticks are so perfect to keep on hand during the holidays for recipes like this and also to put on your charcuterie boards and more! I love them because they are made with quality ingredients. They come in both the Sfilati Tomato and Sfilati Olive that taste so good and have the perfect crunch! I love that I was able to grab a couple of bags at my local HEB grocery store right in the specialty cracker and cookie aisle to last me until the holidays are over!
If you don’t know yet, HEB is one of my favorite grocery stores because they always have the best products stocked and make my shopping experience so enjoyable! I was able to grab everything I needed for my Italian meatball soup, including these delicious Mulino Bianco breadsticks that are going to be lifesavers time and time again this holiday season! These breadsticks add a savory crunch to so many different dishes and appetizers!
Since 1877, Barilla has been perfecting the perfect recipe for each product—always maintaining the same high quality for all. For this reason, they only use eggs from cage-range hens and cream and milk produced in Italy! They are also particularly attentive and proud of their wheat, sugar and vegetable oils, which they monitor closely all the way along the supply chain until they end up in our products and on your table. These reasons alone are enough to grab some of these breadsticks for yourself!
For Italians, and for me too actually, there are no unimportant meals, so why not serve the most delicious food to your guests that you can and make sure that it is prepared with love, too?!
Italian Meatball Soup with Mulino Bianco breadstick dippers is going to be a hit with your friends and family this holiday season; I can guarantee it!
Ingredients:
1 Lb. Ground Beef
1 Lb. Ground Pork
1 Finely Diced Onion
1 Cup Diced Carrots
3 Cloves of Finely Minced Garlic
2 Stalks of Celery, Diced
1 Cup Diced Tomatoes
1 Bay Leaf
4 Fresh Thyme Sprigs
Salt and Pepper
Parmesan Rind
1/4 Parmesan Cheese
1/4 Cup Bread Crumbs
1 Egg
1 Tbsp. Milk
Salt and Pepper
3, 15 oz cans of white beans (drained and rinsed)
6 Cups of Chicken Stock or Beef Stock
3 oz Tomato Paste
1 Tbsp. Olive Oil
Mulino Bianco Sfilati Tomato Breadsticks
Directions:
Make meatballs by combining ground beef, pork, egg, bread crumbs, Parmesan cheese, milk, and a good amount of salt and pepper in a large bowl. Mix by hand to incorporate all ingredients and then form into mini one-inch meatballs.
Heat a large Dutch oven over medium heat and add olive oil. Then add onion, carrots, celery, and garlic; season with salt and pepper; and sauté for 3-5 minutes until the veggies start to get tender.
At this time add in diced tomatoes, tomato paste, fresh thyme, and bay leaf and cook for another 5 minutes.
Pour in chicken stock, parmesan rind, and add drained beans at this time. Season with more salt and pepper.
Bring to a simmer, and then slowly drop meatballs into the stock one at a time. Then stir to prevent sticking.
Bring the soup up to a boil and then reduce heat to simmer for at least one hour, but the longer it sits the more flavorful it gets!
Serve with Mulino Bianco Sfilati Tomato Breadsticks and extra Parmesan cheese!
