I'll be honest, I am not typically an oatmeal person in regards to eating a bowl for breakfast. There are just other things I would rather eat. I always have good intentions to be an oatmeal breakfast eater, but every time I try, I am not satisfied and end up being disappointed that I didn't just eat something else for breakfast. At this point the calories have been consumed and I have to move on to being excited about lunch. However, my savory oats with parmesan and olive oil were a game changer for me and I think you are going to love them too!
This all changed when I was looking through my Instagram feed last week and saw Giada DeLaurentiis's post of her breakfast, which was oatmeal and OLIVE OIL. Yep, you read that right olive oil and oatmeal! I had never tried a savory oatmeal before and was totally intrigued and tried it the next morning. I added a little cheese to the mix and a good dose of salt and pepper and I was hooked!
I have a version of this recipe in my cookbook, First Bites because it’s also equally as delicious for your little ones! Creamy oats and cheese with good quality olive oil, black pepper, and salt topped with a fried egg is seriously decadent and delicious and so satisfying to eat!

This is such an easy recipe to whip up any morning of the week and is extra delicious on a chilly morning or even for lunch! I think you are going to love this twist on oatmeal and I can’t wait for you to try it out!
Ingredients:
1 Cup Rolled Oats
1 Cup Milk (can sub non-dairy here, just make sure its unsweetened and unflavored)
2 Tbsp. Grated Parmesan Cheese
1 Tbsp. of High Quality Extra Virgin Olive Oil
Sea Salt and Freshly Cracked Black Pepper to taste
1 Tbsp. Thinly Sliced Green Onions
Directions:
Bring oats and milk to a simmer in a small saucepan.
Season with a pinch of salt and a few cracks of pepper.
Let the oats thicken, stirring consistently for about five minutes.
Add grated parmesan and stir until melted.
To serve drizzle with olive oil and a more salt and pepper if desired and sprinkle with green onions.
Optional, but highly recommended: Fry and egg and place on top.
