Pumpkin tends to get all of the love at this time of year, but apples deserve their own time in the spotlight if you ask me. There are so many varieties of apples out there, but one of my favorite to bake with happen to be granny smith apples. I love the slight tartness that they bring to a recipe and they are perfect for muffins as well. There is nothing that smells much better than fresh muffins baking in the oven, and these definitely do not disappoint. Hi it's me. Sorry I've been MIA for the past two weeks, but we were on vacation in Boston and Maine and suddenly had to come home because of Hurricane Harvey..and well you know how that went. Life has been interesting to say the least and while our community is still in complete recovery from the storm, I have started to resume somewhat of a normal routine again. My days have been running together and I haven't been sure what day it is for the last week, let alone what season it is! I hear fall is approaching, even though the weather here refuses to let me believe it until this morning where there is, dare I say, a crisp in the air which feels fantastic! With fall, comes all things comforting (which Houston could use right now) and my easy candied pecans are just that...basically a hug in food form.
Sunday we are heading to Boston and Maine for a a little getaway (baby free y'all)! We are definitely planning to eat all of the yummy things along the way including as many lobster rolls as will fit in my belly. This week however we have been eating extra clean in preparation for our indulgences next week, but that doesn't mean that you can't enjoy a little treat just because I am eating low carb and sugar for the next four days! Life is about balance and my easy homemade peach cobbler is the perfect dessert to make before peaches and summertime disappear right before our eyes!
Last week was a blur. Luckily my mom was here, otherwise we might not have made it (or I might not have made it.) I had to make the decision to put my 11 year old pup down very unexpectedly and it hit me hard. He was my first baby and had been with me since I graduated college. Needless to say, I was a little distracted and emotionally drained last week with losing my best friend, plus Parks is a little wild man these days and goes non-stop unless he is asleep which left me little time to spend in the kitchen! Let me tell you, when life hits hard, having a recipe like my healthy chocolate chip pecan muffins can make or break whether or not I start my day off right.
