Salmon is a go-to weeknight meal around here and I love how quickly it cooks and that it can be paired with any vegetable or starch to make a healthy and delicious meal. I took one of my favorite childhood dishes, butter pasta, and gave it a delicious twist that pairs perfectly with seared salmon to make a meal that the whole family will love. Basil butter pasta is fresh, comforting, and compliments this simple pan seared salmon in the best way. You will be making this salmon and basil butter pasta dish on a weekly basis because it is so easy and tasty too.
I am not sure when Taco Tuesday became a thing, but I am totally on board. For one I love tacos (duh), but secondly I love that every week I can use this day as an excuse to make some sort of taco and I don’t have to think about what’s for dinner! The only thing I have to decide is do I want steak tacos, fish tacos, taco salads, or chicken tacos! Not a bad problem to have right? I have been meaning to share my chicken taco recipe and and am finally getting around to it! This recipe is not only full of flavor, but it can be ready in 30 minutes any night of the week! I have created the BEST chicken tacos and you are going to love adding this recipe into your taco rotation!
I made this Easy Panko Crusted Cod Fish last week on Instagram and I had an overwhelming response of people wanting the recipe for it! I can see why because not only is it delicious, but it could not be any easier to make (fifteen minutes easy to make). It was one of those recipes that I made by accident a few months back that turned into one of my favorite fish recipes! It’s my go-to weeknight meal lately and even my three year old gobbles his fish right up! It can be easily served with your favorite vegetable of choice to make a super simple and healthy meal that can be made on even the most exhausting of days! This easy panko crusted baked cod fish is going to be your new favorite way to serve fish up to your family!
I’ve always been a fajita girl when it comes to ordering out at a Mexican restaurant, while my hubby for a long time was more of an enchilada kind of guy. (I converted him to love fajitas so we could share…wink wink.) I love enchiladas too don’t get me wrong, but I tend not to order them out because I feel like they are one of the less healthy options for me to get, and you already know I am not sacrificing the chips and salsa or the margarita! You get what I’m saying here? To compromise, one of the things I like to do with dishes that I love is to recreate some of my favorite restaurant style dishes, that may not be as healthy, at home so that I can have control of the ingredients while still satisfying that craving! My Chipotle Chicken Skillet Enchiladas are just the kind of dish that you would order out at a restaurant, but can be made right in your own kitchen!

I have a few go-to cooking oils that I like to have on hand at all times. One of those oils happens to be sesame oil because I love the flavor that it can give food and because of the health benefits too! Even more than that, I love to find oils that are sourced responsibly and if they have a story behind the brand, even better. I recently discovered PURA Collective and their Ecotierra Organic Extra Virgin Sesame Oil and Organic Toasted Sesame Oils and fell in love with the flavor, quality, and the mission behind this company. After getting to know more about PURA Collective and tasting these oils, I developed this spicy garlic sesame chicken using their Ecotierra Extra Virgin Sesame oil that is the perfect weeknight meal for the whole family!
We spent the weekend baking batch after batch of cookies and although it was so much fun and we were making such special memories, I feel like I could use a salad in my life this week! I figured that you might be feeling the same way in a season of Christmas cookies, treats, and more being at the forefront of everyone’s minds. I find that we tend to eat less salads in the winter time mostly because the weather shifts, but I have a few of my favorite salads that are seasonally appropriate for this time of year! These salads are heartier, full of flavor, and nutrition, and you are probably going to want to work one or two of them into your meal plan this week! My top 10 favorite winter salads are going to help you balance out all of the cookies you might be consuming from now until Christmas!
