Breakfast casseroles are one of those dishes that come in handy for meal prep and when you have guests that will be staying in your house. Whenever I need to feed a crowd for breakfast, this casserole is my go-to recipe. What I love most about it, is that I can prep the ingredients the day before and have breakfast in the oven before my guests even wake up, leaving me time to sip coffee and visit while it bakes! ( #winning ) While there are an endless variety of breakfast casseroles out there, this is one that has been in my family for forever and though I might be biased, I truly think it’s the best! My egg, sausage, and hash brown casserole is a crowd pleaser every time and couldn’t be any easier to make!
I am not sure when Taco Tuesday became a thing, but I am totally on board. For one I love tacos (duh), but secondly I love that every week I can use this day as an excuse to make some sort of taco and I don’t have to think about what’s for dinner! The only thing I have to decide is do I want steak tacos, fish tacos, taco salads, or chicken tacos! Not a bad problem to have right? I have been meaning to share my chicken taco recipe and and am finally getting around to it! This recipe is not only full of flavor, but it can be ready in 30 minutes any night of the week! I have created the BEST chicken tacos and you are going to love adding this recipe into your taco rotation!

Halloween is this week and we got in the spirit by carving pumpkins over the weekend! Parks wanted no part of scooping out the insides (ha) but he was super into helping daddy decide on the facial expressions that each pumpkin should have! We went with one silly face and one spooky face, by request! Do you have traditions each year that your family does for Halloween? Carving pumpkins is definitely one of those things for us along with making a big pot of chili on the actual day of Halloween! My easy homemade beef chili is the perfect soup to make this week to warm you up after you and your kiddos have been trick or treating!
I am not good about meal planning over the weekend. I think it's because that part of my brain turns off when Friday rolls around. So Monday for me is when I plan out my week and figure out all of our meals. One thing is for sure when I am planning, and that is all of the meals have to be EASY and relatively fast too! I recently did a round-up of my top ten easy weeknight meals, and this recipe that I am sharing with you today could easily get added to that list! My spiced citrus fennel braised chicken thighs and carrots should most certainly be added to your weeknight dinner rotation!
You guys know by now that easy weeknight dinners are my jam. I love sharing them with you and they are a necessity in my life and probably yours too! Nothing makes me happier than having a home cooked meal on the table for my family almost every night of the week, but if it takes too much effort or too much time, then it just isn't going to work on a weekday! That's why I try and create recipes that will make your life easier on those days when dinner seems impossible! I figured it would be nice if you had one post to come to to resource when you are a stuck in the weeknight dinner rut, so I am combining my top ten favorite easy weeknight dinners right here!
