It’s time for our final week of the January meal planning series and it just might be the best one yet! I’ve got a little something for everyone this week including some yummy soups, meatless options, and make ahead recipes for breakfast and lunch! I have loved the response from this meal planning series and have enjoyed seeing how you all have mixed and matched and picked recipes that work for your family! You are doing exactly what I hoped you would do with these recipes and I hope it has made your life a little easier too!
Since coming home from Hawaii, I can't help but remember some of my favorite flavors that I experienced on the island. One of the reasons that I love traveling so much is because of the inspiration I always get from the food that I eat! We ate breakfast at a little spot on the water one morning and before our main entrees came, they served us macadamia nut banana muffins that were out of this world! If you didn't already know, macadamia nuts are everywhere in Hawaii and so they use them in tons of dishes ranging from salads to baked goods! I gave the muffin a healthy spin and added a little coconut for even more of a tropical feel! My healthy macadamia and coconut banana muffins are so good AND so good for you, that they will be your new favorite go-to breakfast!
Let me start this off by saying that yesterday it was 65 degrees and sunny...felt completely like a Spring day...today it's supposed to snow and I'm totally confused by it all! This Texas winter has been the craziest yet! But anyhow, I hope we actually see some snow today because Parks will love it and I will love an excuse to make some hot cocoa and cozy up in my PJ's and not leave the house! The thing with snowy weather is that I always want comfort food, which usually comes in some form of a carb. However, I have really been trying to stay conscious of eating a little bit lighter on the carbs during the week so any kind of recipe that gives me that comfort satisfaction while keeping me on track is a winner in my book! My mini pizza frittatas are just the thing to satisfy my carby comfort food cravings without any guilt!
Hallelujah it's Friday! This week has been dragging on and I have been waiting for today since Monday it feels like! I was out of town last weekend, so I am beyond excited to spend thia weekend with my guys. We have a pumpkin party that we are going to where there is a pumpkin recipe contest. I am pretty pumped about getting to make my famous pumpkin bars, as well as a new pumpkin dip that I am testing out too! Other than that, we have a whole lot of chilling on the agenda. I am about to get super busy with a new project that I can't wait to share with you so this will be my last weekend for a while not working. I plan on making pumpkiny things, a big batch of soup, and these super easy chocolate mousse cups and you should too!
