Back to school is in full swing and this week I am all about making your life easier as a parent when it comes to lunch boxes and after school snacks that are healthy and kid-approved! Over the weekend, we went to Louisiana to see our new niece who was just born! It was a whirlwind of a weekend and we were all pretty much wiped out last night when we got back home. After a good night's sleep, I am waking up feeling ready for the week! And it's a BUSY one! One of the ways I prep for a busy week is to make a batch of energy balls! My happy place is in the kitchen cooking up something delicious and nutritious for my family. And now that Parks is getting older, he is also expressing a lot of interest in helping me in the kitchen! I have every hope that he will fall in love with cooking just like his mama, but even more than that I hope I can teach him about where his food is coming from and what it takes to prepare it. I think it's important for kids to learn how to prepare food for themselves and that comes from spending time in the kitchen! One thing that we have really been working on is washing our hands before and after we make anything so that our hands stay clean. Let me start this off by saying that yesterday it was 65 degrees and sunny...felt completely like a Spring day...today it's supposed to snow and I'm totally confused by it all! This Texas winter has been the craziest yet! But anyhow, I hope we actually see some snow today because Parks will love it and I will love an excuse to make some hot cocoa and cozy up in my PJ's and not leave the house! The thing with snowy weather is that I always want comfort food, which usually comes in some form of a carb. However, I have really been trying to stay conscious of eating a little bit lighter on the carbs during the week so any kind of recipe that gives me that comfort satisfaction while keeping me on track is a winner in my book! It's almost been a week since my new book, First Bites, has released! I can't begin to tell you how much it warmed my heart to hear your reactions to the recipes that you made in your own kitchens and that your kiddos (and you) are already loving them! While the past two weeks have been full of devastation for a large portion of my community, this book release was a bright spot in the midst everything else going on around me. I feel like I didn't get the chance to talk to you about the book before it got released as much as I wanted because we were preparing for Hurricane Harvey and what would end up being a catastrophic flood.
