I told myself I wouldn't bombard you with strawberry recipes after I made about a bajillion things with all of those fresh strawberries we picked two weekends ago, but....this strawberry bread is kind of epic and needed to be shared with you sooner than later. And I know a few of you who follow me on Instagram have actually been patiently waiting for this bread to hit your inbox! In two weeks, I have made two loaves of this bread and have eaten a piece almost every afternoon since then! My whole wheat strawberry bread is going to be your new favorite easy breakfast or afternoon snack guaranteed and I can't wait for you to try it!
This week has been spring break, which normally doesn't mean anything to me, but this year Parks' preschool is on the same schedule as all of the other schools so he has been home with me all week. This means my work week has been interesting to say the least and I have had to let a couple of things go that were on my to-do list. Hanging with him is way more important, but I would be lying if I said I wasn't missing my Tuesday/Thursday me time. Luckily the weather has been absolutely beautiful so we have been able to spend lots of time outside, which is always good when you have a toddler! You could say I am definitely ready for the weekend and for daddy to be home with us to give me a little break that I haven't been able to get this week! I am looking forward to a cocktail (or two) and I think I'll start with one of my Strawberry Thyme Bellinis!
Last night we went to the Houston Rodeo and after almost three years of living here, can officially call ourselves Texans! We ate turkey legs, sausages and peppers, drank some really cold beer, saw livestock, the rodeo, and finished the night off with a little live music and The Zac Brown Band. I don't think we have ever had a Monday date night, but it sure was fun to get out for the night and go experience a quintessential Texas tradition! I am a little slow moving this morning as I get going, and I am going to be all about seriously quick and simple eats today! My easy lox and herbed cream cheese naan pizzas are just the thing that I want to eat on a morning like this!
We had the best weekend guys. The weather was gorgeous, we hung out outside literally all day on Friday and Saturday and it was just one of those perfect weekends that you don't ever want to end. I am always excited for a new week/fresh start, but I have to say that I am a little sad to see this particular weekend come to a close! However, with a new week and fresh start, we also get back to our favorite weekly recipes that are healthy, full of nutrients, and keep us going all day long! We usually rotate through a few favorite weekday breakfasts, but one recipe that I continue to make over and over is my blueberry vanilla oatmeal!

Starting my morning out right is key to any productive day and having a healthy on-the-go breakfast is just the way I like to ensure that happens! This weekend just flew right on by for me. I mean I guess it always does, but this weekend in particular was extra fast despite the dreary weather that has become normal around here. (Which, PS is totally not like normal Texas weather!) I also can't believe that it is almost Valentine's Day already this week! We aren't too big on celebrating Valentine's Day, and usually just stay in and cook dinner at home! I do like to make a few treats around this time of year and if I can make them healthy in the midst of all of the sugar options that are bring thrown in our face, then even better! My gluten free cherry coconut protein bites are the perfect healthy last minute Valentine's treat to make!
