Just today I organized my fridge and realized I might be addicted to pickles. I have SIX jars of pickles to be exact and on top of those I have three jars of my spicy pickled green tomatoes (which we will also get to in this post, so donβt you worry)! I am hoping that if you are reading this post that you also have a pickle problem and we can just share our love of pickles and the fact that they take up almost an entire shelf of valuable real estate in the fridge! I am acting surprised here, when in fact I have always been a pickle person ever since I was a little girl! Over the weekend, we went to Louisiana to see our new niece who was just born! It was a whirlwind of a weekend and we were all pretty much wiped out last night when we got back home. After a good night's sleep, I am waking up feeling ready for the week! And it's a BUSY one! One of the ways I prep for a busy week is to make a batch of energy balls! During the week I love making dips that I can serve with lots of veggies for healthy snack options in a hurry. One of my favorite dips to have on hand is hummus. It's full of protein and pairs perfectly with a plate full of veggies that my toddler will eat right up! This weekend just flew right on by for me. I mean I guess it always does, but this weekend in particular was extra fast despite the dreary weather that has become normal around here. (Which, PS is totally not like normal Texas weather!) I also can't believe that it is almost Valentine's Day already this week! We aren't too big on celebrating Valentine's Day, and usually just stay in and cook dinner at home! I do like to make a few treats around this time of year and if I can make them healthy in the midst of all of the sugar options that are bring thrown in our face, then even better! Last night I was watching The Voice and trying to talk myself out of going into the freezer and snagging one of these delicious bars. Which, in all honesty wouldn't be so bad except I made a deal with myself that I am not eating snacks after dinner this week (whyyyy???) so I am trying to keep my pact with myself. But when a snack is slightly sweet, filling, and on the "healthyish" side a girl could be convinced to break the no snack rule very easily!
