This week has felt like the first normalish week since the hurricane. I feel like my brain is finally starting to function properly again and I am feeling inspired in the kitchen after a couple weeks of feeling slightly overwhelmed with everything going on in my community, including my book release! Which by the way, First Bites was the #1 New Release in Baby Food Cooking on Amazon last week! Say whatttt?? So to celebrate I decided to make a batch of my easy white cheddar broccoli waffles which will most definitely have your kiddos eating broccoli without hesitation!
It's almost the weekend! I can taste it, can you? We are headed to Louisiana for the weekend to hang with friends and family and feast ourselves on my father-in-law's famous crawfish. To say I'm excited about his crawfish would be an understatement...I literally eat more than every grown man at the table! There are a few things in this life that I will change my plans for and one of those is a crawfish boil...the other happens to be champagne. Just mention the word and I am there! One of my favorite activities on the weekend is brunch and I think half of that is the fact that I can drink mimosas before noon and it is 100% acceptable. And what's even better than that is a mimosa turned into a popsicle! My mimosa pops swimming in even more champagne are the perfect addition to your at-home brunch plans this weekend!
As a mom there are two things I can't live without. Those things are healthy foods for my body to give me lots of energy throughout the day and delicious cocktails to keep me sane. Happy last week of 2014! How was your holiday week? Mine was pretty good despite the family stuff I had going on...lots of rest, too many sweets, and time spent with friends. Thanks for all of the kind words and prayers that you sent to me, it really means so much... This week is always hard because technically it's still the holidays, but we have to get back into our normal routines. But at least we will have a mid-week break for New Year's to ease us back into reality. Growing up we always had the same traditional New Year's Day dinner: pork of some sorts, collards, black-eyed peas, and cornbread. And I of course still make it because superstitions or not, I don't want to risk it! There are always leftovers with this kind of dinner and I have the best idea for a whole other meal. Farmer's Market Pork and Collard Green Hash is my new obsession for a seasonal hash and you have to make it!
When I went on the Maker's Route road trip, we stayed in the most adorable town called McMinnville in Oregon. We ate breakfast at the same little cafe every morning and the first morning there we all partook in their Heritage Pork Hash, which consisted of tender pork, braised greens, a farm fresh egg, all over potatoes. It was to die for.
