This week started out a little rough, I am not going to lie. Parks had his first tumble and hit his little nose on the coffee table pretty good leaving a little bruise and scrape and basically scared me to death. He was fine after he calmed down, and I on the other hand was shaken for the rest of the afternoon and was sure we needed to go to the doctor. It was a long day , and on days like Monday (or any day really), easy dinners are necessary and there isn't anything more simple than whipping up a fantastic salad. My pear, goat cheese, and pork tenderloin salad is literally on weekly rotation in our house and you are going to love it too!
It seriously feels like forever since I blogged a recipe. I am trying to get back into the swing of things now that all the recipes in the cookbook have been completed, and slowly but surely it is all coming back to me. Getting back into a routine with not only work, but life in general has been much needed.
I was on a roll last week with working out, eating right, and getting back to some kind of regimen and then bam that stratchy throat feeling came at me hard on Friday. I knew it was coming and even though I tried to drink it away with ginger tea and vitamin packed smoothies, it just got worse. Turns out it was a nasty sinus infection and I am finally feeling somewhat better after a few days on antibiotics. I don't know about you, but when I don't feel good I crave soups non-stop. There is just something about the warm broth that makes me feel better instantly. My pozole rojo with pork is just the kind of soup that I want when I am sick (or not sick honestly) and I think that you will love it too!

I have been furiously working away on my cookbook which is why I have been absent from the blogging world for the past little bit, but I figured with the start of the new year this would be a great opportunity to share with you some of my favorite recipes to whip up when I am trying to focus on my health! You guys, this whole trying to get things done thing with a newborn is way harder than I anticipated. I had big plans on being back fully into blogging mode and thought I would be back to whipping up recipes in the kitchen by now. I am back making simple dinners for us in the kitchen and am managing to get a little work done here and there, but am by no means back to my regular schedule just yet. Luckily I had another recipe ready to go that I photographed pre-baby! My almond crusted chicken is super healthy, easy, and just the kind of recipe that I have been making the past couple of weeks.
I have a confession, I am not really back into the kitchen yet. This recipe was one I made and shot before giving birth that I had planned on blogging before I went into labor. And I'm so glad I had it on the back burner to have ready to go post baby because last night was my first night back in the kitchen in over a month! Easy dinners are an absolute essential for me right now, especially because Canean has been having to do some of the cooking while I have been in recovery/new baby mode! My spinach, sun-dried tomato, and goat cheese stuffed sweet potatoes are the perfect easy dinner or side and happen to be packed full of nutrients and can be ready without breaking a sweat.
Fall has officially arrived surrounding me with thoughts of fall fashion, pumpkin everything, and the hope of some cooler weather arriving to Texas in the near future. I love this time of year. The colors, the food, the energy from everyone else's excitement for the season, and this year the anticipation of our baby boy's arrival! Speaking of, we are officially one week and six days out from his due date! Crazy town! My cravings have been carb heavy lately or anything pumpkin related so I combined my two obsessions and created this delicious and easy brown butter and sage pumpkin ravioli with walnuts!
This meal is decadent, everything you love about a fall cozy meal, and is just absolutely delicious!
