Raise your hand if you cook chicken at least once a week? (Me!) I am raising my own hand because we have chicken on the regular at our house. I love buying whole chickens because you get more for your money and then you end up with white and dark meat, which in my house is a good thing because everyone wants something different! This always usually means leftovers are an option and I can turn them into a whole other meal! Talk about cost effective! The problem with chicken is that I can get burnt out on it and I'm sure you do too! April has been an odd month for me, not in a bad way, just really busy! I was out of town, my mom came in town, and now tomorrow I go back out of town again! And now tomorrow, I am headed to Los Angeles for my first ever blogging conference and I couldn't be more excited! I cannot wait to connect with my fellow peers and I know I am going to learn so much! If you saw my Instagram, then you already know my office space got a revamp, so I am super pumped about going to this conference and coming back super inspired and ready to work! And the reason I am telling you all about my travels this week is because when schedules get busy, dinner needs to be simple and if it can be healthy to, even better! My simple pork and spinach miso ramen is to the rescue!
You guys know by now that easy weeknight dinners are my jam. I love sharing them with you and they are a necessity in my life and probably yours too! Happy Monday! How was your Easter weekend? We had family in town and the kids dyed eggs, ate their weight in candy, played in the mud, and just had the best weekend together! Yesterday I am pretty sure that 90% of Parks' diet was sugar and I wasn't far behind him! So now that Easter is over and my excuse to eat candy is no longer valid, I am meal planning for the week and I am all about preparing light meals that the whole family will love while keeping me on track! Y'allll...easy weeknight dinners are something that I cannot live without. They have to be ready in under thirty and have to be easy enough to be cooked with a toddler distracting me at every turn. Yesterday, for instance as I was making this very dish on Instagram Live, mid-video I had to run outside and chase Parks down the side of the house because he had escaped outside. He also proceeded to try and dump a large amount of salt into my pan, needed a new snack every second, and needed to make sure his voice was heard talking over me every chance he got! We've been on a taco kick lately. Tacos for breakfast, tacos for lunch, and tacos for dinner. Matter of fact, we are having tacos for dinner tonight too! I can't get enough of creating different flavor combinations to throw into a taco shell and call it a day. For a while now I have been making banh mi bowls for dinner and my guys go crazy over them. I got to thinking, wouldn't these be amazing in taco form too? Why yes, yes they would...and they are!
