We've been on a taco kick lately. Tacos for breakfast, tacos for lunch, and tacos for dinner. Matter of fact, we are having tacos for dinner tonight too! I can't get enough of creating different flavor combinations to throw into a taco shell and call it a day. For a while now I have been making banh mi bowls for dinner and my guys go crazy over them. I got to thinking, wouldn't these be amazing in taco form too? Why yes, yes they would...and they are! My slow cooker beef banh mi tacos are just the easy weeknight meal that you have been waiting for to spice up your weekly meal routine!
I told myself I wouldn't bombard you with strawberry recipes after I made about a bajillion things with all of those fresh strawberries we picked two weekends ago, but....this strawberry bread is kind of epic and needed to be shared with you sooner than later. In two weeks, I have made two loaves of this bread and have eaten a piece almost every afternoon since then! This week has been spring break, which normally doesn't mean anything to me, but this year Parks' preschool is on the same schedule as all of the other schools so he has been home with me all week. This means my work week has been interesting to say the least and I have had to let a couple of things go that were on my to-do list. Hanging with him is way more important, but I would be lying if I said I wasn't missing my Tuesday/Thursday me time. Luckily the weather has been absolutely beautiful so we have been able to spend lots of time outside, which is always good when you have a toddler! You could say I am definitely ready for the weekend and for daddy to be home with us to give me a little break that I haven't been able to get this week! I am looking forward to a cocktail (or two) and I think I'll start with one of my Strawberry Thyme Bellinis!
Last night we went to the Houston Rodeo and after almost three years of living here, can officially call ourselves Texans! We ate turkey legs, sausages and peppers, drank some really cold beer, saw livestock, the rodeo, and finished the night off with a little live music and The Zac Brown Band. I don't think we have ever had a Monday date night, but it sure was fun to get out for the night and go experience a quintessential Texas tradition! I am a little slow moving this morning as I get going, and I am going to be all about seriously quick and simple eats today! My easy lox and herbed cream cheese naan pizzas are just the thing that I want to eat on a morning like this!

Yesterday I read a review from a mom on Amazon about my First Bites cookbook being "too healthy" and let it get me down. I mean I am happy that her complaint was that the food was too healthy (she even admits that the recipes are not hard to make), but it bugged the heck out of me that she gave it two stars and messed up my ratings based upon the fact that it was healthy, which is what I wanted the book to be by the way. I just didn't/don't understand who would take the time to write that when it doesn't help anyone involved, especially because most of my cookbook purchases are bought by moms who in fact want to cook healthy food for their kiddos! Needless to say, I am waking up with a clear head this morning and that woman's review has only added fuel to my fire to keep doing what I am doing. She actually just re-confirmed that what I am doing is helping people. There is an unhealthy food epidemic in our country so if I can add a little healthy back into the mix then I am going to do it! My healthy blackened salmon cobb salad is just the kind of salad that is full of healthy ingredients, but tastes amazing too!
