It's officially grilling season here in Texas and I'm a sucker for a good burger! I love playing around with different flavor combinations and cooking them at home allows me to control my ingredients and create a burger that is somewhat healthy too! 80% of the time I crave just a regular cheeseburger, but every now and then I get a craving for something a little different. My harissa chicken burgers with citrus mint feta spread are so full of flavor and are perfect to grill up all summer long!
My weekly routine has been out of whack the past couple of weeks. My gym days have been off, my diet has been decent but not great, and the reality is...that's just life sometimes. This week is the first week in a while that I feel like will be back to normal "ish" again and one thing that is going to help me stay on track is meal prepping my lunches! This means that I won't find myself eating junk and I will have a nutritious meal ready to go whenever I get hungry! My healthy curried chickpea salad is just the kind of recipe that is perfect to meal prep at the beginning of the week!
Frittatas are my go-to breakfast, lunch, or dinner. I can use whatever ingredients I happen to have in the fridge and the process from start to finish is fast and easy! I love omelettes too, but let's be honest, those are soooo much work when you are making them for more than just yourself. Ain't nobody got time for that when you have kiddos to feed, or just hungry people in your life in general right? My new favorite frittata combines the flavors of gorgeous Spring produce with a classic white pizza and the outcome is insanely delicious yet simple at the same time. Raise your hand if you cook chicken at least once a week? (Me!) I am raising my own hand because we have chicken on the regular at our house. I love buying whole chickens because you get more for your money and then you end up with white and dark meat, which in my house is a good thing because everyone wants something different! This always usually means leftovers are an option and I can turn them into a whole other meal! Talk about cost effective! The problem with chicken is that I can get burnt out on it and I'm sure you do too! I'm sharing three different ways to roast a chicken that will keep you and your family from getting bored with chicken from week to week!
Summer is right around the corner and it's my favorite time of year for produce! Tomatoes in particular are at their peak and can most definitely shine on their own during this time. I love creating simple dishes when ingredients are so good that they just don't need that much more added to them! When BBQ season and outdoor entertaining are in full swing, I love bringing lighter and healthier dishes to the table to balance out the rest of the spread. My new favorite dish that I will be making all summer long is my garlic and dill tomato salad with cornbread croutons!
April has been an odd month for me, not in a bad way, just really busy! I was out of town, my mom came in town, and now tomorrow I go back out of town again! And now tomorrow, I am headed to Los Angeles for my first ever blogging conference and I couldn't be more excited! I cannot wait to connect with my fellow peers and I know I am going to learn so much! If you saw my Instagram, then you already know my office space got a revamp, so I am super pumped about going to this conference and coming back super inspired and ready to work! And the reason I am telling you all about my travels this week is because when schedules get busy, dinner needs to be simple and if it can be healthy to, even better! My simple pork and spinach miso ramen is to the rescue!
