have always had a thing for chewy candy. Give me all of the Swedish Fish, Sour Patch Kids, and Gummy Bears that you have and I will be a happy camper! I don't however love the sugar content so I rarely eat any of my favorite candies, however road trips are always the exception! Parks inherited my sweet tooth unfortunately and the kid LOVES him some gummy snacks. While I try to only buy organic ones and only keep them in my bag for emergencies, like meltdowns in the doctors office etc, I still don't love giving them to him! That's why I decided to make my own gummies at home where I can add things like spinach to the recipe and not have to feel bad about giving Parks a little treat from time to time! My happy place is in the kitchen cooking up something delicious and nutritious for my family. And now that Parks is getting older, he is also expressing a lot of interest in helping me in the kitchen! I have every hope that he will fall in love with cooking just like his mama, but even more than that I hope I can teach him about where his food is coming from and what it takes to prepare it. I think it's important for kids to learn how to prepare food for themselves and that comes from spending time in the kitchen! One thing that we have really been working on is washing our hands before and after we make anything so that our hands stay clean. With constant hand washing however, toddler hands (and mama hands) can become dry! Happy Monday! How was your Easter weekend? We had family in town and the kids dyed eggs, ate their weight in candy, played in the mud, and just had the best weekend together! Yesterday I am pretty sure that 90% of Parks' diet was sugar and I wasn't far behind him! So now that Easter is over and my excuse to eat candy is no longer valid, I am meal planning for the week and I am all about preparing light meals that the whole family will love while keeping me on track! My sloppy joe stuffed peppers are just the kind of meal that is super satisfying while being low carb and healthy at the same time!
Y'allll...easy weeknight dinners are something that I cannot live without. They have to be ready in under thirty and have to be easy enough to be cooked with a toddler distracting me at every turn. Yesterday, for instance as I was making this very dish on Instagram Live, mid-video I had to run outside and chase Parks down the side of the house because he had escaped outside. He also proceeded to try and dump a large amount of salt into my pan, needed a new snack every second, and needed to make sure his voice was heard talking over me every chance he got! I'm here to let you know that I am extending the weekend another day! And yes I have the authority to do that. This weekend went by too fast, which it always does, but this weekend really sped by and I am just not ready to go into full on weekday mode today! So today I am challenging myself and you to do one thing for yourself that you wouldn't normally allow yourself to do today. Self-care Monday should totally be a thing if you ask me! Take a bubble bath in the middle of the day, read a book for a little while, take a power nap, whatever it is..do it! I need that today, and I am guessing so do you! And you know what else we need today? A little comfort food, so let's make ourselves a spinach and artichoke grilled cheese and call it a day!
