For the first two weeks of January I was having a hard time getting out of holiday mode and back on track with regular everyday life. I talked to so many people who felt the same way this year and finally this week I started feeling like myself again in all aspects of my regular routine. I got back to eating real food, moving my body daily, and most importantly I got my work mojo back! One of the ways I like to stay on track is by starting my day off with a healthy and filling breakfast that gives me energy to power through the day! Oatmeal is a great way to start you day and you can add just about anything you want into a bowl and make it work! My golden milk overnight steel cut oats are a great way to ensure you have a nutritious breakfast any day of the week!
Happy New Year! I hope you all had a lovely holiday and are feeling rejuvenated and ready to tackle 2019! If you are like us, this week means the first week of getting back to reality, back on schedule, and back in the kitchen! I am definitely ready to start getting back to eating meals that are nourishing, keep me energized, and make me feel good and I figured that you are probably ready too! That’s why I will be sharing an easy family-friendly meal plan with you each week for the rest of the month to help you get back on track as a family! These plans will give you ideas for breakfast, lunch, dinner, and even a couple of snacks for you to mix and match as you choose or you can follow exactly! I hope my healthy eating meal plan week one gives you some inspiration to get back making yummy food that is not only delicious, but good for you and your family too!
Feel free to adapt these recipe to make them suitable for your family’s dietary needs! Let’s get cooking!

I love taking traditional recipes and turning them into something new. Spring rolls are one of my favorite takeout items, but for some reason I never make them at home! I love that they are light, packed with flavor, and usually packed with veggies too! If you saw my Spicy Garlic Sesame Chicken post, then you already know that I am currently obsessed with my Ecotierra Organic Sesame Oils! They have become one of my favorite oils to keep in my pantry and I have been using them for everything from sautés to dressings! One of my new favorite recipes that I have been making is my Shrimp Spring Roll Salads that has everything that I love about a traditional spring roll, but deconstructed in salad form!

I have a few go-to cooking oils that I like to have on hand at all times. One of those oils happens to be sesame oil because I love the flavor that it can give food and because of the health benefits too! Even more than that, I love to find oils that are sourced responsibly and if they have a story behind the brand, even better. I recently discovered PURA Collective and their Ecotierra Organic Extra Virgin Sesame Oil and Organic Toasted Sesame Oils and fell in love with the flavor, quality, and the mission behind this company. After getting to know more about PURA Collective and tasting these oils, I developed this spicy garlic sesame chicken using their Ecotierra Extra Virgin Sesame oil that is the perfect weeknight meal for the whole family!

We are nearing the end of the year and I cannot believe how quickly this holiday season has passed by! It seems like every year I look so forward to the holidays and in a blink of an eye, they disappear! Luckily we still have New Year’s to celebrate before heading into 2019 which is why I partnered with my friends at Village Farms to bring you two recipes to enjoy during your celebrations! My refreshing Cucumber Rosemary Gimlet is the cocktail you are going to want to sip on during your New Year’s Eve festivities and my hearty One-Dish Black Eyed Pea Stew is the perfect dish to cook up on New Year’s Day! These two recipes are easy to make, full of flavor, and you are going to want to make them year after year!
Christmas is 12 days away! I repeat, 12 days away! AHHHHH. I mean I’m so excited for it, but I also have about a bajillion things on my to-do list to get done before we go to my parents house next weekend! I feel like I am alway so excited for the holidays and then BAM it’s over in a flash! I wish we could just pause the actual week of Christmas and put it in slow motion so we could soak it up just a little bit more! Things like soaking up time with friends and family, savoring good food, and sipping festive cocktails! My meyer lemon bourbon mule is one of those cocktails that you should definitely be sipping during all of your holiday festivities!
