I love Vietnamese food. Lately I can’t stop making dishes with an Asian flare and meatballs happen to be the perfect vessel to infuse with those delicious flavors! One of our favorite Vietnamese dishes is a Bahn Mi Sandwich. It can be made with several different proteins, but I happen to love a pork Bahn Mi the best, especially when topped with quick pickled veggies, spicy jalapeño, and cilantro! It’s a sandwich loaded with flavor and my family can’t get enough of it! I have even made Bahn Mi Tacos in my slow cooker that are so perfect for any weeknight dinner! My new favorite twist on the traditional sandwich, is my Bahn Mi Meatball Sandwich that is perfect for meal prepping and dinners that the whole family will love!
My kiddo happens to be a donut lover. It’s the one thing he can’t resist and asks for whenever we are out and about and they are available. I am not sure when Taco Tuesday became a thing, but I am totally on board. For one I love tacos (duh), but secondly I love that every week I can use this day as an excuse to make some sort of taco and I don’t have to think about what’s for dinner! The only thing I have to decide is do I want steak tacos, fish tacos, taco salads, or chicken tacos! Not a bad problem to have right? With back to school starting for some this week, easy breakfasts that can be prepped in advance are essential for getting out of the door on time! I love to have ready to eat breakfasts in the fridge for the whole family because I have a kid who wakes up hungry and a hubby who takes his breakfast to go! Some days I get tired of overnight oats and eggs so switching it up to keep things interesting is key! Chia pudding is one of those breakfast that I tend to forget about and then when I remember, I go through a chia pudding phase where I can’t get enough! Currently I’m in that phase, and because it’s so easy, I created easy chia pudding (three ways) so that you can set yourself up for success in the mornings!
