Fall is here and it’s time to break out those slow cookers y’all! I honestly always forget how much I love my slow cooker until I use it and realize just how easy it makes weeknight dinners. I know Instant Pots are all the rage, but I just can’t stop using my slow cooker. There is something about the smell of cozy food cooking all day long and filling the house with delicious smells that just makes me so happy. One of the recipes I make the most in my slow cookers is a classic pot roast. This is a meal that my mom made me growing up and it happens to be one of my husband’s favorite fall meals! After being out of town for a week, I spent the day yesterday meal prepping to help prepare for a week of getting back on track with work, school, and our regular routine! One of the first items up that I prepped was an easy pasta salad. Pasta salads are on of those dishes that I love making ahead of time because they make easy lunches and/or a simple addition to dinner! Another perk is that they just get better in the fridge after sitting for a day or two. I love that I can add a tons of veggies into the mix to bulk up the pasta along with whatever protein I want to add in whether that be beans, chicken, or cured meats!
