I don't know about you, but my mama always taught me to salt my melons. It can take a mediocre melon to pretty dang good with just a little sprinkle. To me there is nothing that says summer more than a cold slice of watermelon sprinkled with just the right amount of salt. It's the perfect snack, although I can literally eat my weight in watermelon, which actually can turn into a problem. I mean...I guess if you are going to be addicted to a food, fruit is one of the better options, but still y'all...I have ZERO self control when it's a good one! I will tell you that I have found the perfect way to add a little pizazz to your next watermelon that will be a hit at any BBQ or picnic! My chili lime salted watermelon is going to become your new favorite thing to eat this summer, and I can promise you that!
I wouldn't consider myself a non-computer person, but I also would not consider myself a savvy computer gal. I get by and know how to do the things I know how to do...you know what I mean? Anyway, I have been putting off creating food recipe videos for a while because it is out of my comfort zone, but yesterday I decided to bite the bullet and create my very first video with a super simple recipe that happens to be one of my favorite side dishes! My crispy roasted potatoes are perfect for any night of the week and can be served at breakfast, lunch, or dinner!
Happy Monday guys! How was your Easter weekend? I hope it was filled with chocolate, friends, family, and maybe a little rest too! We had a great weekend spent playing outside in the sprinkler, hunting for eggs, and stuffing our bellies full of BBQ. I have however been battling a cold, and while it hasn't made me feel horrible, it has got me sneezing and my nose running like crazy. Whenever I feel my body starting to get sick or worn down I always try and rev up my smoothie intake because I can cram a ton of good ingredients into one drink! My citrus immune boosting smoothie is just the kind of drink that I will be sipping on all week long and I figured you might need it too
This week has already been a doozy and it's only Wednesday! Parks has all four, one-year molars cutting at the same time and poor baby has a low grade fever, stuffy nose, and is not his usual peppy self (aka he's cranky cranky). But who could blame him? Teeth cutting through your gums just sounds like an awful thing all babies have to go through...good thing we don't remember it! His appetite is down, which never happens, and we are both pretty exhausted from lack of good sleep and it's definitely weeks like these that I am so glad that I have a batch of my leftover cereal granola bars hanging out in the freezer for easy grab breakfasts or snacks for me and Parks!
Thanksgiving is over...did you make it through? Are you still in stretchy pants? Because it's totally okay if you are. If you had a week anything like mine, you are probably trying to get back on a the healthy diet bandwagon (if not for only a few weeks before Christmas) and are looking for recipes that aren't lacking in the flavor department. My healthy whole wheat shrimp pasta with kale pesto is just the kind of one pot meal that will have you forgetting that you are eating something completely good for your body.
Y'all, I did it! I had my first cooking demonstration last weekend, made it through, and actually had an amazing time! I have to say I was a little nervous because I have never done this sort of thing before, but the crowd was amazing and everything went as smoothly as I could have hoped for! It was a whirlwind of a weekend, and while it was so much fun, I am dragging this week. I am already counting down until Friday. Give me all the caffeine please and give it to me now! One of my favorite ways to get some good energy first thing in the morning is to drink butter coffee. I drink it every morning before the gym and decided to give it a little twist. My pumpkin spice butter coffee is so delicious and in my opinion, it is better than any pumpkin spice latte that you could ever hope for!
