This week has already been a doozy and it's only Wednesday! Parks has all four, one-year molars cutting at the same time and poor baby has a low grade fever, stuffy nose, and is not his usual peppy self (aka he's cranky cranky). But who could blame him? Teeth cutting through your gums just sounds like an awful thing all babies have to go through...good thing we don't remember it! His appetite is down, which never happens, and we are both pretty exhausted from lack of good sleep and it's definitely weeks like these that I am so glad that I have a batch of my leftover cereal granola bars hanging out in the freezer for easy grab breakfasts or snacks for me and Parks!
We've all been there..buy a humongous, one size box of cereal and the first half of the box gets eaten and then the second half of the box gets a little stale and no one wants them anymore. They clutter your pantry until you decide to throw them away in another six months because you swear someone will end up eating them. BUT...they don't.
I got tired of throwing away perfectly good cereal just because they were a little stale and so I decided to use them in some healthy granola bars to provide a little crunch! The stale cheerios come to life with their new found purpose and these granola bars are absolutely delicious and healthy! I make a couple of batches and cut them into individual portions, store them in the freezer, and they are there whenever life hits you hard or you just want a yummy afternoon snack that satisfies your sweet tooth, your salty tooth, and your hunger pain.
Granola bars are super easy to make at home and are so much cheaper and healthier this way too! I make all kinds of varieties, like my chewy homemade nutty granola bars and can't live without them! My leftover cereal granola bars are going to save your stale cereal from the trash and your whole family will love them!
Ingredients:
2 Cups of Cereal of Choice (I used 3 different ones here)
2 Cups of Old Fashioned Rolled Oats
1 Cup of Peanut Butter
1/4 Cup Coconut Oil
1/2 Cup Honey
1/4 Cup Chia Seeds
1/8 Tsp. Sea Salt
Note: You can alternatively just use 4 cups of leftover cereal and not use the oats.
Directions:
In a small saucepan melt peanut butter, coconut oil, and honey together and whisk until smooth. Let cool slightly.
While the peanut butter mixture melts, combine cereal, oats, chia seeds, and salt in a large bowl.
Pour peanut butter mixture over the dry ingredients and stir until everything is coated well.
Press the ingredients into a parchment lined cake pan in one even layer.
Place the pan into the freezer for 30 minutes and then slice into bars.
Place bars in an airtight container or in plastic storage bags and freeze until ready to eat.
Note: Bars do better if they remain chilled until ready to eat.
