I don't know about you, but my mama always taught me to salt my melons. It can take a mediocre melon to pretty dang good with just a little sprinkle. To me there is nothing that says summer more than a cold slice of watermelon sprinkled with just the right amount of salt. It's the perfect snack, although I can literally eat my weight in watermelon, which actually can turn into a problem. I mean...I guess if you are going to be addicted to a food, fruit is one of the better options, but still y'all...I have ZERO self control when it's a good one! I will tell you that I have found the perfect way to add a little pizazz to your next watermelon that will be a hit at any BBQ or picnic! This week has already been a doozy and it's only Wednesday! Parks has all four, one-year molars cutting at the same time and poor baby has a low grade fever, stuffy nose, and is not his usual peppy self (aka he's cranky cranky). But who could blame him? Teeth cutting through your gums just sounds like an awful thing all babies have to go through...good thing we don't remember it! His appetite is down, which never happens, and we are both pretty exhausted from lack of good sleep and it's definitely weeks like these that I am so glad that I have a batch of my leftover cereal granola bars hanging out in the freezer for easy grab breakfasts or snacks for me and Parks!
I always here of these moms who say they haven't had anything to eat all day. In my head I'm like whaaattt?? How can this be? Even on my busiest days, you can betcha I made time to eat something whether I had to stand while eating, take it in the car, or whatevah! I can guarantee you I got my calories in. But, sometimes this gets me into a tricky situation if I am super busy because I end up eating maybe not the best thing nutritionally for my body and then I kinda crash and burn in the energy department, which is not good with a one year old whose energy never stops unless he is asleep. That all changed when I learned that making your own jerky is actually super easy and is the perfect high protein snack to get me through even the busiest of hours.
Happy day after Labor Day guys! How was your weekend? I hope you did the opposite of labor and got to relax with your family and friends! Canean was out of town for a couple of days and I started binge watching Friday Night Lights on Netflix, which I had no idea was going to suck me in like it did! I also had a fabulous brunch Sunday morning with a girlfriend before picking the hubs up from the airport! Yesterday, we lounged around, walked the dogs, and ate big juicy cheeseburgers for dinner! Needless to say, we are both in need of some healthy for the rest of the week! I love having snacks like my homemade nutty granola bars on hand for weeks just like these!

Lately if my fridge isn't stocked with go to healthy options, you can find me eating whatever is in reach and that is not a good situation! I don't have the patience to fix something, or to think about what I want, so prepping my food in advance has been key during this pregnancy! Honestly it's a great practice to get in the habit of even if you aren't pregnant, especially if you are trying to stick to a healthy eating plan! I feel like I've been seeing frozen bananas in recipes everywhere right now. You can make ice cream with them, freeze them for your smoothies, and now you can add making healthy banana pops to the list! I have been dreaming of going to the beach lately. It's like everywhere I turn around I see signs of white sand and ocean or someone I know is going to the beach. I usually have a spring beach trip planned at least for the weekend, but this year is probably the first year that nothing is set in stone yet. With moving, and everything else transitioning in our life, Canean and I are going to try and squeeze in a trip later in the summer probably to the Northeast Coast to try something different. With that said, I know most of you have summer vacations planned or at least some lake and pool days are going to be happening, and I KNOW, that you are all about getting those summer bodies ready to be on display.
