Over the weekend, we went to Louisiana to see our new niece who was just born! It was a whirlwind of a weekend and we were all pretty much wiped out last night when we got back home. After a good night's sleep, I am waking up feeling ready for the week! And it's a BUSY one! One of the ways I prep for a busy week is to make a batch of energy balls! My new favorite combination of flavors and ingredients is my chocolate coconut energy balls that taste delicious and are the perfect snack to get you through the afternoon slump!
My hubby is addicted it açaí bowls. Every Friday he takes our son to a local cafe and they share one together! Although I have been putting açaí packets in my smoothies for a while now, until we went to Hawaii I had never actually had an açaí bowl! (I loved it obviously!) They were so fresh and delicious, the perfect way to start our day! I knew I wanted to start making them at home because they are much more cost effective this way, and now we can have them whenever we want! I created a recipe for easy loaded açaí bowls that anyone can do right in their own kitchen!
Since coming home from Hawaii, I can't help but remember some of my favorite flavors that I experienced on the island. One of the reasons that I love traveling so much is because of the inspiration I always get from the food that I eat! We ate breakfast at a little spot on the water one morning and before our main entrees came, they served us macadamia nut banana muffins that were out of this world! If you didn't already know, macadamia nuts are everywhere in Hawaii and so they use them in tons of dishes ranging from salads to baked goods! I gave the muffin a healthy spin and added a little coconut for even more of a tropical feel! My healthy macadamia and coconut banana muffins are so good AND so good for you, that they will be your new favorite go-to breakfast!

Frittatas are my go-to breakfast, lunch, or dinner. I can use whatever ingredients I happen to have in the fridge and the process from start to finish is fast and easy! Y'allll...easy weeknight dinners are something that I cannot live without. They have to be ready in under thirty and have to be easy enough to be cooked with a toddler distracting me at every turn. Yesterday, for instance as I was making this very dish on Instagram Live, mid-video I had to run outside and chase Parks down the side of the house because he had escaped outside. He also proceeded to try and dump a large amount of salt into my pan, needed a new snack every second, and needed to make sure his voice was heard talking over me every chance he got!
